My TOC Keto Holiday Dressing

 


What You'll Need

  • 1 1/2 cup Almond Flour
  • 1 cup Coconut Flour
  • 3 tsp Xantham gum
  • 4 TBS melted butter
  • 9 eggs
  • 2 cup almond milk
  • 1lb Bacon (already cooked)
  • 1/2 cup Olive Oil
  • 2 Teaspoons of Sage
  • Salt and Pepper 1/2 tsp each
  • 1 cup chicken broth
  • 6 chopped green onions
  • 1 cup pork rinds powdered


DIRECTIONS

  • Pre-Heat oven to 350 F
  • Mix Almond Flour, Coconut Flour, salt, pepper, sage, and xanthan gum together in a separate bowl.
  • Mix 8TBS melted butter, 4 large Eggs, 1/4 cup olive oil, and 2 cups Almond Milk in another bowl.
  • Add dry ingredients to wet ingredients, incorporate well.
  • Mix in crumbled fully cooked bacon.


I used my hands to mix this well, and it's going to seem a LOT dried than normal cornmeal batter mixed up.  Use the other 1/4 cup olive oil to coat your cast iron skillet.

Smooth the mixture out into the iron cast skillet so it's level.  

Bake for 50 minutes or until set (no jiggle toothpick comes out clean)


You've made the cornbread for the dressing!  Now let's move on to the second stage!


  • Crumble that cornbread into a glass baking pan.
  • Mix five eggs (yes five) Six chopped green onions, 1 cup chicken broth, then Sage, Salt and Pepper to taste!
  • Sprinkle 1 cup grated pork rines over the top after you've mixed all that in together!

It will look like this after you mix it up




Cook until a toothpick comes out clean (30 minutes for me)  350 F
