The number one thing I hear people complaining over when we talk Keto is the lack of bread.  Trust me when I say you won't miss bread when you try a Chaffle.  What the heck is a Chaffle?  In the most simplistic terms it's a cheese waffle, but trust me, that's not ALL it is!  With all the incredible recipes out there today, you can turn it into bread for sandwiches, dessert waffles, a great breakfast, and so much more.  These are also SUPER family friendly.  Have you ever seen a kid turn down a waffle?  Me either!  I'm about to BLOW YOUR MIND with how versatile Chaffle's can be!  Outside of ingredients for each of these recipes, all you need is a Dash Waffle maker, and some non-stick spray!

Keto Works Great with Type 2 Diabetes

I was able to get my blood sugar controlled with keto in six weeks.  Going from 377 at my last physician visit, to a steady 103-108 6 weeks later.  So now that we’re clear on that, I think it’s only fair I discuss something else that happened.  Trust me, I’m not trying to scare you here, this happened to me but now I know what to look for, so it doesn’t happen again.  I’m taking Metformin and Glipizide and even with that, prior to Keto, I was at 377! 

Yesterday I was extremely dizzy, feeling like I was having a panic attack, and honestly?  I was ready to head to the emergency room because after an hour I was still feeling the same way.  I do take medication for panic attacks, and they usually work within thirty minutes.  When my symptoms didn’t subside after taking my medication and doing the normal things I do to fight the attack (watch funny videos and/or take a long shower) it dawned on me that I hadn’t taken my blood, and this could very well be a diabetic issue.

My blood sugar was 77.  For me that’s low and you know what the symptoms of low blood sugar are?  Confusion, weakness, racing heartbeat, headache, nausea, and nervousness.  Wow, same as a panic attack for me.  Glipizide is one of the pills I take and known to lower your blood sugar on low carb, while my Metformin is not.  So, after speaking with my physician, I’ve taken the glipizide out of my regimen.  I STRONGLY suggest you talk to your doctor before taking this step!

This to me, is a good sign that I’m heading in the right direction, but yes, it was scary because I didn’t know what was going on!  So if you're a type 2 diabetic, just be aware of your blood sugar levels.  I strongly suggest during the first month you check your levels often.  I'm ready to get to the point where I don't need Metformin either, but for now, I'm happy to see one of my medications go.  



Snacks

Snacking is a personal preference, and it depends on my personal mood whether I want something sweet or savory.  Just remember though, portion control for calories is still a great idea, even though these are low-carb options.  If you want to keep up with what you're taking in, try Carb Manager (it really does help keep all your daily allowances in check).  With all that being said, here are some of MY favorite snacks! Keto Shrimp Boil Recipe


 Keto Shrimp Boil

It’s A Shrimp Boil Baby Ditching the potatoes to make a shrimp boil was a big priority for me, because my family loves a low boil!  I did some research and was SHOCKED to find out that baby corn can be used even though we stay away from corn on the cob!!! The reason behind that is baby corn is low in carbs (GASP) and only 26 calories (SAY WHAT) but please don’t try this with real corn on the cob if you’re doing keto!  Don’t take my word for it, Look at the can! Yes, the can, not the recipe beside it.  



Ingredients:

2 Cans of Baby Corn (I used Dynasty)

3 Pkgs Polska Kiebasa Sausage (I used Hillshire Farms)

3 Bags of Frozen Shrimp (I used peeled, tail-off, deveined medium)

1lb Bag of Frozen Yellow Squash

1 TBS Old Bay Seasoning (If you like it hotter use more)

½ cup of Unsalted Butter

2 TBS Minced Garlic 

Salt/Pepper to taste

 

Directions:

1.    Preheat oven to 400 degrees Fahrenheit.

2.    Melt your butter in the microwave.  Mix it with your seasoning and garlic.

3.    Slice your sausage into bite-size portions as well as your corn (after draining of course)

4.    Pull out your sheet pan and put your sausage, corn, and shrimp in a layer.

5.    Pour over the buttery seasoned sauce.

6.    Cook for 45 minutes (just make sure your shrimp is pink)

7.    Enjoy!

 






I'm About To Change Your Keto Diet Forever!

 


I don't know about you, but I was a HUGE bread lover before I started Keto.  I'm not saying the other recipes out there for Keto Cornbread aren't good, but there was something missing for me.  It was almost a fluke that I figured this out.  Outside of Keto, I've also used vaping to help me quit smoking, and I had this concentrate for some mixes I was considering making.  Before you freak out over it being used for vaping, all food-grade flavor concentrates can and are used for food preparation, it's what they were created for.  I found this recipe for cornbread on their website, but I made a little change as I added 20 drops of Corn Bread Flavoring by OOO instead of the 15 drops they recommended. The recipe for the base of the cornbread can be found here:  https://www.oooflavors.com/pages/keto-corn-bread-recipe  Like I said, if you like sweet cornbread keep the sweetener, if not ditch it.  Either way, you're going to be amazed at how this improves the flavor of your Keto cornbread.  Don't let your experimentation with flavor concentrates stop at cornbread.  There are so many delicious ways to bring flavor into your food that we technically shouldn't be eating on Keto, but flavor concentrates give us the illusion that we're being bad, even when we're not!  These flavor concentrates have zero carbs!  I'm working on a mashed potato mock with flavor concentrates that I'll bring here if it turns out well.



How I Start My Day with Keto

 


I admit it, mornings aren't my favorite time.  I want something quick and easy, and of course healthy.  The SlimFast Keto shakes, have given me that, and I rarely start any day without one.  You're supposed to mix them with water, but I have to be extra, so I mix them with unsweetened almond milk instead.  To me, they taste better this way, and I stay fuller longer.  My favorite variety?  Vanilla Cake Batter.  It's like an early morning treat and hey, I want to be pampered a bit.  So let's take a dive down and see what's in this shake that has taken over my life.


That's a ton of vitamins, and as you can see not that many calories for a breakfast plan.  The unsweetened almond milk will add another 30 calories, and 1 carb, but to me, it's worth it.   Yes, you can drink it without almond milk.  Just because I prefer it that way, doesn't mean you will.  This can be picked up at Walmart, which makes it super convenient for me since I order groceries online.  It tastes great and does what it's supposed to, keeps me full.  There are tons of shakes out there, and I will probably try others, but this has worked well for the last five and a half weeks for me.

I started Keto with the meal plans listed in this blog, determined not to let my blood sugar or obesity destroy my life.  Within two weeks my blood sugar was back into normal ranges!  That was all I needed to decide this was the answer I needed for my health.  Within five weeks I'd lost 14lbs, so not only was I helping maintain my blood sugar, but I was losing weight at the same time.  Oddly enough, I wasn't hungry while doing it either! All the diets I'd tried in the past left me starving, and as anyone that has dieted can tell you, it's a failure waiting to happen.  Keto changed that for me!

I knew for me, I'd have to find a sustainable menu plan that kept me excited and not starving, so that's what I set out to do.  Yes, it's a huge change giving up potatoes, rice, mashed potatoes, and bread, but it doesn't have to be something you dread!  For me, it gave me the encouragement to seek out replacement foods that left me feeling happy and full.  Don't go in with the thought that you're giving up things, that's a quick recipe for failure.  Go in with the mindset that I'm going to create a new way of eating and discovering foods that can replace all those things that were killing me.  

I know it sounds crazy that you can give up all those carbs and still be full, but trust me, it's not.  Within my first two weeks on Keto, I found that I didn't need as much food to fill me up.  I'm a STRONG believer that you've got to feel full if you're going to make this work.  Preparing yourself mentally is probably the most important thing you can do when starting on this "lifestyle" (I don't call it a diet).  You're going to be cooking your meals (and if you're working that means prepping ahead of time).  What you won't get on my website are lies.  I am going to tell you exactly how it is without sugar-coating it.

It comes down to basically you want to change your life and health or you don't, and only YOU can make that decision.  I'm going to do my best to help make it easier for you, but you have to make that choice.  Whatever you choose, know that I wish you nothing but the best.  If this Southern Woman can make the switch away from a high carb lifestyle to 20 carbs a day, I know you can too!

Ketakis Pork Rind Recipe




Takis – My kids are absolutely in love with Takis chips, purple bag.  I wasn’t in love with them not being Keto since both my young men are working on weight loss with Keto with me.  Being the mom, I knew I could come up with something similar and make it healthy!  So that’s what I did.  Using pork skins and my own mix of seasonings, my kids swear these are just as close to the ones loaded with carbs. (Don’t sue me Takis, your product is great, just not Keto friendly)

 

What You’ll Need

1 Oz Bag of Pork Skins (I use Macs)

1 Packet Truvia Stevia Leaf sweetener

1 Tsp Paprika

½ Tsp Garlic Powder

1 TBS Chili Powder

1 TBS Mrs Dash Lemon Pepper

1 Tsp black pepper

1 Tsp old bay seasoning mix

1 Tsp Tajin Clasico Chile Lime Seasoning

 

 

Directions

Preheat your oven to 350° F

Put your pork skins on a baking sheet and cook them at 350 for ten minutes.

While waiting for them to heat up, mix together all the spices in a Ziplock bag.

Pull out your pork skins and dump them in the Ziplock bag.

Shake Well & Enjoy!
